  • 50g of whole white onion
  • 100g whole medium size carrots, peeled and cut into 4 pieces
  • 50g of leek white, cut into 3 segments

  • 1 tablespoon of kosher salt
  • 3 g cinnamon
  • 3g Garam masala
  • 2g mace
  • 40g olive oil
  • 300g cauliflower florets
  • 250g butternut squash, peeled, seeded and medium small dice
  • 20g of thyme sprigs
  • Salt and pepper
  • 50g toasted pumpkin seeds
  • 120g white wine vinegar
  • 200g apple sider vinegar
  • 120g fine dice shallots
  • 180g maple syrup
  • 450 g vegetable oil
  • 12g salt
  • 3 g black pepper
  • 15 sage leaves
  • 2 cups of oil
  • Pinch of salt
  • Julienne half of an apple and hold it in an acidulated water
  • Radish
  • Parsley
