Chef Ron McKinlay’s culinary journey has been driven by a relentless pursuit of excellence. His passion for Michelin-level cooking led him to book a one-way ticket overseas more than 15 years ago. Since then, he has honed his craft in top kitchens around the world, eventually settling in Toronto, where he continues to push boundaries in the culinary scene.

An hour before you cook your fish, unwrap it and leave out in the fridge, skin side-up. This helps dry it out just enough to achieve crispy skin when seared. If you can't find branzino, look for red snapper.
