Ingredients

  • 2 to 3 lb beef roast (chuck, ribeye, or your preferred cut)
  • 1.5 lbs potatoes, cut into wedges
  • 2 medium onions, quartered
  • 1 whole garlic bulb, halved horizontally
  • 3-4 sprigs fresh thyme
  • 2 tbsp olive oil
  • 1 tbsp Dijon mustard (optional, for coating beef)
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and freshly ground black pepper, to taste

Directions

  1. Preheat the oven: to 425°F (220°C).

  2. Prepare the beef: Pat the roast dry with paper towels. Mix together smoked paprika, garlic powder, onion powder, salt, and pepper in a small bowl. Rub the spice mix evenly over the beef. If you like, spread Dijon mustard on the roast before applying the spice rub for extra flavor and crust.

  3. Prepare the vegetables: In you All-Clad Roasting pan , toss potato wedges and onion quarters with olive oil, salt, and pepper. Nestle the garlic halves (cut side up) and thyme sprigs among the vegetables.

  4. Roast: Place the beef roast on top of the vegetables. Roast in the preheated oven for 25 minutes, then reduce the heat to 350°F (175°C). Continue roasting for another 30-45 minutes, or until the internal temperature reaches your desired doneness.

  5. Rest the beef: Remove the roast from the oven and transfer it to a cutting board. Tent loosely with foil and let rest for 15 minutes. This helps the juices redistribute for a juicy, tender result.

  6. Serve: Slice the beef against the grain. Serve alongside the roasted potatoes, caramelized onions, and garlic. Optionally, drizzle some of the pan juices over the beef for extra richness.
